I can recommend the Beqa Island Resort off the coast of the main Fiji Island. Cute bungalows, great food and spectacular scenery. It’s a dive resort so it’s very quiet when the divers are off doing their thing. Beqa is where fire walking was invented and you can see a demo at the resort.
